Bourbon Pumpkin Butter

I love a good bourbon drink in the fall, and I can’t imagine a better combination than bourbon and pumpkin. Now, not all bourbon is gluten free, so be sure to do some research before buying. You could also replace the bourbon with brandy or leave it out if you want to have boring ole pumpkin butter. This is how we made it:

Bourbon Pumpkin Butter

Ingredients:

2 cups pumpkin puree (Click here to make your own)

½ cup water

½ cup maple syrup

2 tsp lemon juice

2 tsp pumpkin pie spice

1 oz bourbon

Pinch of salt

Directions:

In a medium saucepan, mix together all ingredients. Turn the heat up to medium and bring the pumpkin mixture to a gentle boil. Turn down the heat so the pumpkin has the gentlest of bubbles and then pull up a good podcast because this is what you’re doing for the next 30 minutes! You don’t need to stir constantly, but you want to make sure none of the pumpkin sticks to the bottom of the pan and burns. Your pumpkin butter will become a richer shade of orange, and it will be thick and delicious. Let it cool and get yourself some good gluten free bread!
