Gluten-Free Sugar Cookies

We’re here to let Santa know we’ve baked his damn cookies and are ready for our presents. But seriously, we actually baked them all, then ate them, but would still like our presents. I’ve had a tough time finding a gluten free replacement for one of my favorite childhood treats, but oat flour saves the day again! These cookies are vegan, gluten-free, refined sugar free, oil free, and delicious af. This is how we made it:

Gluten-Free Sugar Cookies

Cookies:

1 flax egg (1 tbsp finely ground flax meal + 3 tbsp warm water)

½ cup coconut sugar

½ cup coconut cream

2 cups gluten-free oat flour

1 tsp xanthan gum

1 tsp baking powder

⅛ tsp salt

Cashew Butternut Cream Frosting:

1 cup cashews soaked in hot water for about an hour, then drained

½ cup coconut cream

¼ cup maple syrup

2 tsp lemon juice

1 tsp vanilla extract

1 tsp tapioca starch

Directions:

Soak your cashews ahead of time.

The frosting takes about an hour to set up in the fridge, so let’s start here. In a food processor, add the drained cashews, coconut cream, maple syrup, lemon juice, vanilla extract, and tapioca starch. Blend until completely smooth. This will take a few minutes, and you should scrape down the sides from time to time to make sure you have a very smooth, consistent texture. Transfer it to a small bowl, and place in the fridge.

Assemble your flax egg and let it sit and gel for about 5 minutes.

Preheat your oven to 350 F.

Line a baking sheet with parchment paper.

In the bowl of a kitchen aid mixer or a regular medium bowl, add the flax egg, coconut sugar, and coconut cream. Beat the mixture with your kitchenaid or a handheld mixer until smooth.

In a small bowl, mix together the oat flour, xanthan gum, baking powder, and salt.

Add the dry ingredients into the wet and mix with the mixer or by hand until the dough forms. The dough should be fairly stiff and easy to work with. If it is not, add a little more flour at a time.

Add some gluten free flour or more oat flour to a large surface, and roll out until the dough is about ¼” thick using as much flour on top as necessary so the dough doesn’t stick.

Cut the dough into cute shapes and place the cut outs on your prepared baking sheet.

Bake the cookies for 7-8 minutes. Let them cool, and decorate them for Santa!

Makes about 2 dozen cookies.
