The only thing better than cornbread is cornbread waffles! These gluten free, savory waffles are great for breakfast, but we prefer to eat two a time as a sandwich and then carb crash and take a nap. This is how we made them:
Rick’s Famous Gluten Free Cornbread Waffles
Ingredients:
1/2 cup harina de maíz
1 tsp baking powder
1/4 tsp salt
1/4 tsp ground garlic
2 shakes of red pepper flakes
2 shakes of cayenne pepper
Pepper to taste
1 tbsp coconut oil, melted
1 cup water
Directions:
Preheat your waffle maker
In a medium bowl, mix together the harina de maiz, gluten free flour, baking powder, salt, garlic, red pepper, cayenne, and pepper
Add coconut oil and water and mix until smooth. It should pour like a light batter.
Generously spray coconut oil to grease
Pour batter into the waffle maker enough to fill the bottom element, but don’t over pour.
Allow to cook for about 5 minutes. Depending on your waffle maker, you may wish to flip it at some point, cook for another 3 minutes or when the waffle maker indicates.
Makes 4 waffles
