Vegan Patatas Bravas

There’s no place I love more in the world than Barcelona, and my favorite thing to eat in Barcelona before I was vegan was patatas bravas! Fortunately, these spicy delicious potatoes are super easy to make healthier with homemade sauce and mayo. These are also gluten free, refined sugar free, and oil free. This is how we made them:

Vegan Patatas Bravas

Ingredients:

Potatoes:

3 Potatoes, cut into about 1” pieces

½ tsp paprika

¼ tsp salt

¼ tsp pepper

Salsa Brava:

1 15 oz can diced tomatoes

½ onion, chopped

2 cloves garlic

1 tsp smoked paprika

Pinch of Cayenne

Salt to taste

Garlic aioli:

¼ cup oil free vegan mayonnaise (reipe here)

1 garlic clove, minced

Directions:

In a medium bowl, toss the potatoes with the paprika, salt, and pepper.

Pro tip: line your air fryer basket with silicone dumpling basket liners to prevent the potatoes from sticking without using oil. Pour the potatoes in the basket, and cook at 370 F for 20-22 minutes stopping to shake the basket about halfway through.

In the meantime, let’s make the sauce. In a high powered blender, add the can of tomatoes, chopped onions, garlic cloves, paprika, cayenne, and salt. Blend until smooth, and set aside.

For the aioli, you can either mix the garlic into the mayo by hand, or put it in the blender.

Once your potatoes are ready, top with the salsa brava and the aioli and serve!
