This has been my very favorite breakfast for the last two weeks, and I’m not even getting close to being tired of it. I have an arrhythmia that tends to act up this time of the year, and I decided to start tracking my nutrition in an app to see what I might be lacking in my diet to trigger episodes. It turns out I’ve been getting about half of the amount of recommended potassium in a day, which is shocking since I am the queen of potatoes! I was not too sad to come to terms with the fact that I would need to up my potassium intake, since potatoes really are such an awesome source of potassium! This is a great oil free breakfast, and combined with our omega-rich flax egg, we dare you to find a healthier breakfast! This is how we made it:
Ingredients:
1 large sweet potato, cut into ½” cubes (skin on)
½ onion, roughly chopped
1 green pepper, chopped
4-5 shiitakes, stems removed and chopped
½ tsp paprika
½ tsp poultry seasoning
Salt and pepper to taste
Optional additions:
Baked tofu slices
Sauteed Veggies
Directions:
In a large bowl, add the chopped vegetables and seasonings, and toss together. You can optionally add a tsp of oil.
Spritz a little oil in the air fryer basket, and then add the seasoned veggies. Spritz the top with a little oil, and then cook at 400 F for 13 minutes. Toss the veggies, and then cook for another 13 minutes at 400 F.
Top with your favorite additions and pat yourself on the back for this healthy start to your day!
