I eat oatmeal for breakfast pretty much every day. It’s so easy and nourishing. Plus it’s cheap AF. I used to hate oatmeal because I always made it super boring with milk, sugar, and fruit, and it wasn’t until I started studying Ayurvedic Medicine, that I realized I would have to get creative if I was going to make myself eat a healthy breakfast each morning. There is nothing boring about this oatmeal! It’s kind of like having mango sticky rice for breakfast, but this is a super fast and healthy version! It’s vegan, gluten free, oil free, and refined sugar free. This is how we made it:
Coconut Mango Oatmeal
Serves 2
Ingredients:
1 cup old fashioned rolled oats
2 cups water
½ cup cut mango, fresh or frozen
¼ cup unsweetened coconut flakes or shreds
3 tbsp maple syrup (or ⅓ cup date paste)
1 tbsp hemp or flax seeds (optional, but get in those omegas where you can!)
½ tsp cinnamon
Directions:
Add the water, mango, coconut, maple syrup, hemp seeds, and cinnamon to a small saucepan. Bring to a boil over high heat, and then reduce heat to a simmer.
Add the oats, stir, and cook for 10 minutes, stirring occasionally.
That’s it! Let it cool down enough to be edible, and reward yourself for making this super simple delish breakfast!
