These three ingredient raw mango bites make an awesome, quick decadent dessert or a snack for a road trip! They may look small, but I honestly can’t eat more than one in a sitting because it’s reminiscent of eating candy and they are delightfully sweet from the dried mangos. Best yet, they’re vegan and refined sugar free! This is how we made them:
Mango Coconut Bites
Ingredients:
1 cup chopped dried mango
1 cup chopped walnuts
½ cup unsweetened shredded coconut, plus more to coat
Directions:
Add all of the ingredients to a food processor, and blend until well combined, but there should still be a little texture.
Roll the mix into about 12 balls, and then roll in coconut or even chopped walnuts to coat. Try not to eat them all!
