Vegan Nutella Steel Cut Oatmeal

Y’all, I was today years old when I discovered the miracle that is hazelnut butter! I’ve had weird synthetic, sugar filled versions like nutella or simple syrup, but I’ve never had plain, delicious hazelnut butter. It’s so amazing that I want to put it in everything, and brace yourself for all of my recipes to now include it! This is a great, simple breakfast that I accidentally invented while making oatmeal and eating hazelnut butter by the spoonful. You may want to make a double batch on the weekend and warm this up for a quick breakfast during the week! As usual, this oatmeal is vegan, gluten free, oil free, and refined sugar free. This is how we made it:

Vegan Nutella Steel Cut Oatmeal

Ingredients:

4 cups plant based milk

1 cup steel cut oats

¼ cup hazelnut butter

2 tbsp raw cacao

2-3 tbsp maple syrup or date paste

Pinch of salt (optional)

Directions:

Add the milk to a small saucepan, and bring to a boil over high heat. Add the salt if using.

Add the oats, give it a stir, reduce the heat to a simmer, and cook for 30 minutes, stirring occasionally.

Your 30 minutes is up. You are hungry. You have earned this. Check to make sure the oats are cooked all the way through. Then stir in the hazelnut butter, raw cacao, and maple syrup or dates paste.

Serve with some fruit, chia, flax, or anything you like!
