Vegan Air Fried Pickles

I first experienced fried pickles at the Alamo Drafthouse in Austin, TX circa 2008. I loved them so much that I would sometimes go see garbage movies just so I could eat fried pickles and their hatch mac and cheese. No regrets! Since giving up gluten and dairy, I’ve just sort of accepted that these sour crunchy delights would be missing from my life. WRONG! These pickles are vegan, gluten free, refined oil free, and delicious AF! This is how we made them:

Vegan Air Fried Pickles

Ingredients:

6-8 dill pickle spears

1 cup gluten free bread crumbs

Batter:

¼ cup gluten free flour mix

½ cup almond milk (or any non dairy milk)

1 flax egg (1 tbsp ground flax + 3 tbsp water whisked and set aside for 5 minutes)

½ tsp baking powder

½ tsp paprika

¼ tsp pepper

¼ tsp dill weed

⅛ tsp salt

Directions:

Mix together all batter ingredients in a small bowl and pour bread crumbs into another small bowl.

Dip pickle spears into the batter one at a time, and then dip into bread crumbs to coat.

Place covered pickles in greased air fryer tray.

Cook the pickles one at 370 degrees for 15 minutes each flipping over halfway through.

Serve with vegan ranch or blue cheese and eat during an epic Netflix binge. May we recommend Glow?
