Vegan Pistachio Bark

Whether you are celebrating Galentine’s Day or Valentine’s Day, we have the sweet treat for your hunny! Making your own chocolate is great because even store bought vegan chocolates have a lot of garbage-y, questionable ingredients. It’s shockingly easy to make, and this pistachio bark is super fast since there are no molds involved! This chocolate is refined sugar free as well! This is how we made it:

Vegan Pistachio Bark

Ingredients:

1 ¼ cup food grade cocoa butter finely chopped

2 tbsp coconut oil

1 cup cacao powder

¼ cup maple syrup

1 tsp vanilla

Pinch of salt

Pinch of cayenne

Pinch of turmeric

½ cup picatchio meat

Directions:

Line a baking sheet with parchment paper and set aside.

Add about 1 inch of water to a medium saucepan and bring to a simmer over medium heat. Place a glass or ceramic mixing bowl on top Make sure the bowl does not touch the boiling water to create a double boiler.

Add finely chopped cocoa butter and coconut oil and let melt, stirring occasionally with a wooden spoon. Once melted, carefully remove bowl from heat and add maple syrup, vanilla salt, turmeric, and cayenne and stir with a whisk until blended. Then add cacao and whisk until blended.

Let your pistachio bark cool in the fridge or freezer. I store mine in the fridge since coconut oil can get a little melty if you live in a warm climate. Once it’s set up, break it into pieces, and give it to those you love.
