Yes, I’m a bit obsessed with white beans lately, and no, I’m not slowing down! They’re so versatile and have such a great, creamy texture when blended. They seriously make delicious gravy, plus it adds some protein and fiber to a recipe that is normally just made from fat. This is a win! Our gravy is vegan, gluten free, and oil free, and can be made with or without homemade shiitake sausages! This is how we made it:
Vegan “Sausage” Gravy
Ingredients:
1 cup cooked white beans, rinsed
1 cup unsweetened plant milk (recipe here)
1 tbsp nutritional yeast
1 tbsp Bragg’s Liquid Aminos
1 tsp poultry seasoning
½ tsp liquid smoke
¼ tsp black pepper
Shiitake sausages (Optional- Recipe here)
Directions:
In a high powered blender, add the white beans, milk, nutritional yeast, Bragg’s, poultry seasoning, liquid smoke, and black pepper. Taste, adjust seasoning and salt if needed.
Add the gravy to a small saucepan over medium-high heat. Bring to a boil. Reduce to a simmer, and cook for about 5 minutes. The gravy will thicken as it cools. Crumble some shiitake sausages into the gravy, and stir.
Serve over our gluten free biscuits!
