Vegan Sweet Potato Brownies

We are so excited to celebrate 12,000 Instagram followers, and are so appreciative to be a part of this amazing community of the protectors of the animals, the environment, and our freaking health! We’re celebrating with these super delicious, potassium rich, gluten free, oil free, and refined sugar free brownies! This is how we made them:

Vegan Sweet Potato Brownies

Ingredients:

1 flax egg (1 tbsp ground flax meal + 3 tbsp warm water)

1 cup sweet potato mash (I microwave a sweet potato for about 8 minutes and scoop out the meat)

¼ cup maple syrup or date paste

⅓ cup date sugar or coconut sugar

½ cup raw cacao

½ cup gluten free flour blend (or oat flour)

½ tsp baking soda

Pinch of salt

½ cup chopped walnuts

Directions:

Assemble your flax egg in a small bowl, and set it aside for about 5 minutes to let it set up.

Preheat your oven to 350 F.

Prepare your 8×8” brownie pan by using a silicone pan, lining a pan with parchment paper, or spraying a pan with a little oil.

In a high powered blender, add the sweet potato mash, maple syrup, and date sugar. Blend until smooth, and then depending on the strength of your blender, you can either add the rest of the ingredients, or transfer to a bowl to add the rest of the ingredients and stir by hand.

Pour the brownie batter into your prepared pan, and bake it for 40-45 minutes. Test the brownies using a toothpick to make sure they are cooked all the way through, and eat em up!
