Balsamic Glazed Carrots

This is a feast good enough for a rabbit. On easter! These balsamic glazed carrots make an awesome side for your Easter meal! They’re so simple to make, and they’re also super yummy! Better yet, they’re vegan, gluten free, oil free, and refined sugar free. This is how we made it:

Ingredients:

1 lb carrots

1 tbsp balsamic vinegar

1 tbsp maple syrup (or date syrup)

Salt and pepper

Directions:

Preheat your oven to 400 F.

Line a baking sheet with a silicone baking sheet or parchment paper.

In a small bowl, whisk together the balsamic vinegar and maple syrup.

Lay the carrots in a single layer on a baking sheet. Brush the carrots with the balsamic mix, then place them in the oven for 15 minutes. Remove from heat, flip the carrots, and pour on the rest of the balsamic mix. Bake them for another 15 minutes. Check to make sure they’re cooked all the way through, and serve!
