Kimchi Fries


Air Fryer Kimchi Fries

I recently had dinner at one of my favorite vegan restaurants in Montreal, LOV Vegan. Out of all of the amazingly healthy options on the menu, I opted to have kimchi fries for dinner. It’s been a long week. We all make mistakes. I also haven’t had alcohol in almost a month, so sometimes you have to find ways to enjoy life through a heaping pile of potatoes. It was so delicious. It was smothered in sriracha aioli, greens, and kimchi. I immediately realized that I must recreate a healthier version of this dish at home without using oil! You can either use store bought or homemade kimchi, some delicious winter green, and chipotle aioli for dipping! Get your air fryer ready, because this can be made without oil, refined sugar, and dairy! This is how we made it:


Ingredients:

1-2 Russet Potatoes, cut into french fry shapes

Pinch of Paprika

Salt and pepper to taste

½ cup kimchi (recipe here, and if using store bought make sure it doesn’t contain fish sauce!)

½ bunch swiss chard or other hearty green

Chipotle aioli to top

Directions:


Soak the cut potatoes in warm water for 10 minutes.


Drain, and toss with paprika, salt, and pepper. If you’re not avoiding oil, you could also toss in 1 tsp of olive oil with the seasoning.


Coat your air fryer with a little oil or line with parchment paper, and add the seasoned potatoes. Cook the potatoes for 10 minutes at 370 degrees. Shake them up, and then cook them for another 10 minutes. Depending on the size of your cuts, they may need another 5-10 minutes.


Meanwhile, let’s sautee your greens. Heat a skillet over medium-high heat and add little water. Add your greens, and saute for a few minutes or until they get a little wilty. Season with salt and pepper.


To serve, plate the fries, add the aioli, greens, and kimchi. Dive in!
