It’s hearty, warming, spicy, and surprisingly not sweet! Plus, it looks stunning and will totally impress your friends. Here’s how we whipped it up:
Ingredients:
- 2 shallots, chopped
- 2 large sweet potatoes, peeled and cut into cubes
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 can full-fat coconut milk
- 4 cups veggie stock
- 1 tbsp green curry paste
- 1 tbsp no-fish sauce
- ½ lime, squeezed
- 1 tsp salt
- Pepper to taste
- Cilantro for topping
Directions:
- Sauté the Aromatics
Heat a large pot over medium-high heat. Add a splash of veggie stock, an ice cube, or a bit of oil. Toss in the shallots and sauté until they’re soft, about 5 minutes. Add the ginger and garlic, and more liquid if needed. Stir until fragrant, about a minute or two. - Build the Soup Base
