Coconut Gingerbread Eggnog

My favorite boozy holiday tradition is definitely eggnog! But raw eggs are super gross, and with coconut milk who needs them! Coconut milk wins all of the healthy awards for being high in potassium, calcium, and good fats! It’s the perfect Christmas party treat and practically a meal in itself. This is how we made it:

Coconut Gingerbread Eggnog

Ingredients:

2 Cans Full Fat Coconut Milk

2 Cups water

1 cup bourbon, rum, or water

¼ cup molasses

2/3 cup maple syrup

1 ½ tsp cinnamon

1 tsp ginger

1 tsp nutmeg

Pinch of salt

Directions:

Mix all ingredients in a blender. Check sweetness and thickness. I like a thick eggnog, but you may want to add more water (or alcohol) depending on your tastes. Serve over ice and sit by a fire with some Hallmark Christmas movies.
