Vegan Spanish Rice – SOS Free -Gluten Free – Instant pot

It’s so easy to prepare this vegan version of traditional Spanish rice in the Instant Pot, and it tastes great without any added salt, oil, sugar, or gluten. Get ready to wow your dinner guests with this simple but delicious side dish!

Although an Instant Pot is used in this recipe, you may just as easily prepare delicious Spanish rice in a rice cooker or a big saucepan.

Just throw everything into a pot or rice cooker and set the timer for the same amount of time as you normally would cook rice.

This is a great dish for the Instant Pot since it requires little effort and time. Sauté the garlic and onions first. Cook for 5-10 minutes over medium heat. The remaining components should be mixed in, and the top knob should be turned to “Sealing.” Pressure should be adjusted manually to “High.” Then, schedule 20 minutes of your time.

Ingredients-

  • • A little over a quarter cup of low-sodium vegetable broth
  • • 1 onion chopped
  • • 2 cloves garlic minced
  • • 1 cup of brown rice, uncooked
  • • Pepper, red, 1 chopped
  • • Diced tomatoes, one 15-ounce can (no salt added)
  • • Don’t forget the juice!
  • • Suggested Measurement: 1 Tablespoon Tomato Paste
  • • A single teaspoon of chili powder
  • • 1 teaspoon cumin

Instructions-
