Our favorite seasonings is liquid smoke, because it makes everything taste like bacon, especially eggplant! You can use our Eggplant Bae-con in a BLT, as a breakfast side, or with some sweet gouda mac and cheese!
¼ c Olive Oil
2 tsp Liquid Smoke
½ tsp Paprika
Dash of Cayenne
Few Grinds of Freshly Ground Black Pepper
Preheat oven to 300°and line 2 baking sheets with parchment paper.
Half eggplant, and then half again so you have four even quarters. Using a mandolin, slice each quarter into about ⅛” strips or a little thinner if you want them extra crispy.
In a small bowl, whisk together olive oil, Braggs, paprika, and liquid smoke. Place the eggplant strips into the bowl and them soak up all of that smokey goodness for about 15 minutes.
Place eggplant slices onto parchment-lined baking sheets and grind a little pepper on top.
Bake until eggplant is cooked through and beginning to get crisp, 60 minutes flipping halfway through.
