Oil Free Mushroom Gravy

I was born in the midwest, and if there’s one thing a midwesterner loves, it’s gravy. How else do you think we get our coats for winter? As a kid, I was responsible for gravy every year for the holidays because my grandma had taught me how to make a good gravy once, and it was my contribution to our Thanksgiving from then on. I’ve logged a lot of gravy hours, and I have often joked that I can turn anything into a gravy! Since I’ve been trying to stick to a WFPBNO lifestyle, I thought my gravy days were done. After some experimentation, I swear you will not miss the oil in this healthy version! This is how we made it:

Oil Free Mushroom Gravy

Ingredients:

½ onion, finely chopped

3-4 mushrooms, finely chopped

2 cloves garlic, minced

4 cups veggie broth (recipe here or store bought)

1 tbsp Bragg’s Liquid Aminos

¼ cup cornstarch

1 tbsp nutritional yeast

¼ cup water

Directions:

Heat a small saucepan over medium-high heat, and add an ice cube, some broth, or a little water. Add the onions, and stir frequently until they begin to soften or about 5 minutes. Add the mushrooms and garlic, and cook until soft, adding a little more water if necessary.

Add the veggie broth and Bragg’s, and bring to a boil. Reduce heat to a simmer.

In the meantime, whisk together the cornstarch, nutritional yeast, and water in a small bowl.

Add the starch mixture into the broth being sure to give the mix a good whisk before you add it into the broth. The cornstarch tends to settle quickly, so we want to make sure it’s nice and smooth before adding it into the broth. Whisk ferociously and consistently until it’s all dissolved into the broth. No gravy lumps ever!

Cook at a simmer for about 5 minutes stirring frequently. Your gravy will continue set as it cools, but you can still adjust the thickness at this time. If you want a super thick gravy, you could add 2 more tablespoons of cornstarch dissolved into 2 more tablespoons of water.

Season with salt and pepper to taste. Remove from heat. Serve on top of Cashew Cream Mashed Potatoes (recipe), tofurkey, pumpkin pie, a glass of wine, anything that needs a little gravy in its life!
